Tomato-Ricotta Rigatoni with Sausage
Needing to come up with a quick and tasty dinner, I decided to throw together the following ingredients, which resulted in a winning combination. Matthew says I have to make this again! Sorry there are no pictures, we ate it too fast! And this recipe makes a lot, it will serve 6 to 8, depending on how hungry you are!
- 1 lb Italian Sausage, bulk
- 4 cups Tomato Sauce (fresh or from a jar)
- 1 cup Ricotta cheese
- 1 tbsp Balsamic Vinegar (optional)
- Seasonings to taste
- 1 lb Rigatoni (prepared according to package directions)
- Grated Parmesan cheese for garnish
- Brown the sausage in a dutch oven. Remove and drain fat.
- Add tomato sauce and balsamic vinegar to sausage and heat through.
- Add Ricotta to the tomato sauce and heat through. Season to taste
- Mix in cooked Rigatoni and stir to coat well.
- Serve topped with fresh grated parmesan cheese.
